Spanish Omelette Recipe

This Spanish Omelette cooked my way, quick and easy…

You will need:
2 eggs
1 spring onion or a small white onion finely chopped
Half a sliced green chilli
Salt and pepper
1 small potato, mashed
Handful of Peas – frozen is fine

Boiling a whole pot of water for one potato is ridiculous so microwave for 5 mins. Peel the skin off, mash, add milk and marg, salt and pepper till you get a fluffy, creamy (no lumps) mash.

Heat a frying pan and add a swirl of oil, enough to coat the bottom of the pan. Add the chopped onions  sliced green chilli and peas and fry till soft. You can also add other veg; spanich, mushrooms, chives.

Beat the eggs together and add a pinch of salt and pepper and pour into the pan. Swirl the egg around.

Use a spatula to stir the egg quickly.

When most of the liquid egg has cooked add the mashed potato to one side of the egg circle.

Flip the other side over and turn off the heat.
