GBK launches fusion burger



Award-winning chef created  the original GBK menu in 2001

Peter’s Menu includes a burger, sides and shake all crafted in his trademark fusion style

Celebrated New Zealand chef Peter Gordon, dubbed “the Godfather of Fusion cuisine” has created an exclusive menu with Gourmet Burger Kitchen (GBK). Peter’s Menu will be launched on 30th March at GBK restaurants across the UK, and reflects his pioneering culinary style.

Peter created the original Gourmet Burger Kitchen menu back in 2001 and has always remained a part of the GBK family. Fellow Kiwis Adam, Greg and Brandon asked for his input when they first had the vision of introducing the UK to premium beef burgers. Using only the freshest of ingredients, the founders took inspiration from their favourite eateries back home in New Zealand.

Fast forward 14 years and Peter is still doing what he does best – experimenting with ingredients, textures and flavours at GBK.

Never one to conform, his Duck Confit Burger features succulent yet crisp confit duck layered with a creamy duck liver pâté. Topped with cheddar cheese, crispy shallots, rocket and a fiery ginger and apricot chilli jam, the burger is served in a buttery brioche bun.

Side dishes are just as inventive; Sweet Potato Fries with Tamarind Dressing and Dukkah and a fresh Spring Homeslawwith Mint, Pomegranate Molasses and Sumac.

Peter has also been getting creative with GBK’s legendary shakes, creating his own Banana Biscoff milkshake, a delicious combination of banana ice cream and Lotus Biscoff caramelised biscuits.

Peter Gordon said, “The UK burger scene has evolved hugely over the last 14 years. It seems like every day a new burger is making headlines, so when it came to creating my own, I knew it had to be something unique to stand out. Putting my own stamp on the menu has been an exciting process and I’ve put the same care into this as I do with every dish I create for my own restaurants. Our fans are always on the lookout for the next big thing in burgers and I am confident they will agree this one is something a bit special.”  

Tim Molema, Head of Food at GBK added: “We always strive to develop novel burger recipes, both on our regular menu as well as with our specials. Peter started that creative approach in 2001 so to have him back in our development kitchen, coming up with ideas and seeing what works has been a blast.”

Peter made his name as Head Chef of The Sugar Club in Wellington in the late 80s. Award-winning incarnations of The Sugar Club followed in Notting Hill and Soho. Today, he oversees the running of The Providores & Tapa Room and Kopapa in London, and Bellota and The Sugar Club in Auckland. In 2009, he was awarded the New Zealand Order of Merit by HM The Queen for services to the food industry.

Peter’s Menu will be available from 30th March and costs £17.95 for the full bundle.
